Huila is Colombia’s largest coffee-growing department, renowned for its fertile volcanic soil, high altitudes, and ideal climate. It has been at the forefront of specialty coffee production for decades, like forever ever. This lot, composed of Castillo and Colombia varieties, is a testament to meticulous craftsmanship. The coffee is pulped, soaked for 15 hours, and then slow-dried carefully in the sun. The Campos Roa family is like the Outkast of Colombian coffee—individual innovators with an unmistakable harmony when they combine forces. Don Elias Roa and his wife Bellani bring over 20 years of expertise to their farm, crafting specialty coffee that has earned them a reputation as leaders in their field. Their daughter Derlin, a former Colombian Aeropress Champion, found her rhythm in the coffee world, while her partner, Diego Campos, returned to Colombia after working as a barista in Melbourne to build his own legacy. In 2021, Diego was crowned World Barista Champion, proving once again that their partnership is anything but idle. This season tasting notes of cloudy apple juice, sweetness of maple syrup and fresh white nectarine, making this version of La Familia a coffee that strikes all the right notes.
